Spring has certainly sprung and we couldn't be more excited about the change of season. Warmer weather and new seasonal produce has us creating delicious new recipes. It seems that all of these upcoming recipes are vibrant, healthy and bursting with orange and greens!
Orange is of course represented by our salmon flesh. The beautiful, rich colour is courtesy of the natural antioxidant Astaxanthin which is naturally found in algae and krill and is an essential micronutrient for salmon. It is so important to the salmon that they have evolved the capacity to store it in their muscle tissue and that’s what makes salmon pink. Salmon use it to protect their precious omega-3 oils and ultimately it protects their eggs.
Salmon isn't the only orange on the plate, citrus fruits such as Navel Oranges, Mandarins and Tangelos are also in season. These fruits accompany salmon well in salads or as a salsa and are high in vitamin C which is suggested to assist tissue repair as well as promoting skin, bones and teeth health.
Also great for your skin and in season right now are Hass and Carmen avocados. It's no secret that avocado pairs extremely well with salmon. Avocados are a great source of antioxidant carotenoids like alpha-carotene, beta carotene, beta-cryptoxanthin, zeaxanthin and lutein which are compounds that provide your skin with protection. Avocado, much like salmon, is also bursting with good fats!
