Marlborough is a globally renowned winemaking region. It’s featured heavily on world class dining menus with sauvignon blanc as the flagship varietal. What is it about Marlborough that makes their sauvignon blanc a household name?

The answer lies in the combination of a sunny, dry climate, landscape and soil, not to mention the passion of local wineries to produce this bounty. The balance of extraordinary purity and intensity of flavours set around impressive aroma, distinctive fruit characteristics and appealing balanced acidity is superb.

Just a short trip away from the rolling vineyards, are the idyllic Marlborough Sounds which is home to our Regal King salmon. Our salmon pairs perfectly with Marlborough sauvignon blancs and at this year’s Marlborough Wine and Food Festival we teamed up with local winemakers to showcase this unity. 1. Regal Salmon Sashimi & Brancott Estate Flight Marlborough Sauvignon Blanc 2016

The delicate texture of fresh Regal salmon evokes the purity of its place of origin; the cool, deep sea waters of the Marlborough Sounds. With its generous marbling, Regal salmon is vibrant in colour. In taste, our salmon has a creamy mouth feel reminiscent of ripe avocado. The layers of salmon have a buttery texture, almost velvety, and melt away in the mouth.

Paired with The Brancott Estate Flight Sauvignon Blanc which presents fragrant passion fruit, lemons and grapefruit on the nose. These aromas are followed by a sweet pungency and ripe lemon sherbet flavours that change to mangos. The palate shows great balance with a refreshing, crisp and lively acidity.

2. Regal Cold Smoked Salmon Slices & 2016 Villa Maria Cellar Selection Marlborough Organic Sauvignon Blanc

Our Regal Cold Smoked Salmon is cured in a dry salt and sugar mix, smoked at a low temperature in a natural beech wood and then sliced. With its vibrant colour and sea-salt aroma, each delicate sliver has a velvety texture which delights the palate and melts in your mouth to leave a lingering, sweet smokiness. The unique qualities of Regal Cold Smoked Salmon add elegance to any dish. It is ideal for delicate finger foods and canapés where taste, texture and visual impact are important.

Paired with 2016 Villa Maria Cellar Selection Marlborough Organic Sauvignon Blanc. An intense expression of Marlborough Sauvignon Blanc, bursting with distinct Awatere Valley aromas of snow pea, kaffir lime and gooseberry. The wine is powerful and refined, displaying vibrant grapefruit and subtle passionfruit notes with fantastic mid-palate weight, and a balanced acidity.

3. Regal Artisan & Astrolabe Province Marlborough Sauvignon Blanc 2015

The Regal Artisan Range is our salute to a traditional, more considered approach to crafting fine foods. We’ve taken the finest hand-selected Marlborough King salmon, cured it with premium sea salt, and smoked it for several hours using native manuka wood chips. The result is rich in aroma, vibrant in colour, and sophisticated on the palate. Salmon lovers will instantly realise that this is the finest quality salmon, lovingly crafted through every moment of the curing and smoking process.

Paired with Astrolabe Province Marlborough Sauvignon Blanc 2015. An appearance of pale straw with green highlights and an aroma of lemongrass, lime peel and passionfruit, with background notes of white currant and red pepper. Medium-bodied with a white peach, tropical fruits and citrus flavours, and a dry mineral finish on the palate.

4. Regal Pastrami & Clos Marguerite Sauvignon Blanc 2016

Our Regal Pastrami is cured in a dry salt and sugar mix and then smoked at a low temperature and crusted with a traditional pastrami pepper mix. Perfect for sandwiches and canapes.

Paired with Clos Marguerite Sauvignon Blanc 2016. Balance is the leading feature for the wines from this small Awatere Valley single-vineyard; the Clos Marguerite Sauvignon Blanc 2016 is well in line with the previous vintages. Concentration, power and finesse, complexity and subtlety are the characteristics of this wine. Expressive bouquet of fresher and richer aromas; with hints of tomato vines, lemongrass and fennel, flinty mineral and yeasty notes, as well as plenty of ripe fruit characters from the grapefruit, lemon, zesty, citrus peel, to the reacher apricot and melon. A creamy-textured mouthfeel, weighty, yet crisp and dry with a persistent finish.

5. Regal Wood Roasted Salmon Natural & Jackson Estate Stich Sauvignon Blanc 2015

The Regal Wood Roasted Salmon range is slowly roasted over aromatic beech wood. The salmon has a fragrant fusion of smoky aromas and sea salt, with a luxuriously buttery taste.The golden exterior of the salmon flakes easily to reveal a soft orange-pink hue that characterises the rustic nature of this product. Regal Wood Roasted Salmon is a delight to eat hot or cold, on its own or in pasta or salad dishes.

Paired with Jackson Estate Stich Sauvignon Blanc 2015. The nose dominates with intense lifted florals, white stone fruits and zesty citrus. This follows through to the pallet which predominates with lovely fresh citrus and ripe white stone fruit flavours, fine grained lees driven textural backbone and a pure mineral concentration. A perfectly balanced and crunchy acidity gives the wine lift, balance and poise.

6. Regal Wood Roasted Salmon w Seresin Estate Sauvignon Blanc 2015

Much the same as our Natural product but with a subtle mixed peppers and spices flavouring for some extra flavour and depth. 

Paired with Seresin Estate Sauvignon Blanc 2015. Subtle on the nose with warm notes of ripe yellow stone-fruit, soft passion fruit and chalky-mineral complexity. The palate is layered and finely textured, with ripe gooseberry, tropical and citrus notes, framed by a mouth-watering acidity, which creates a persistent finish.
