A note from Al Brown; and his pantry essentials

If there is a silver lining to the predicament we find ourselves in, it is that the kitchen is going to get more of a workout than perhaps it normally does.

Hell yeah I say….. The joy and love of cooking is about having time on your hands, to take pleasure in the creative and giving process, having time to bake, prepare a meal, even bottling and preserving for a later date.

So, dust off those cookbooks that you have been longing to get into and embrace the extra time you have to produce delicious dishes for the loved ones that surround you. It's also time to think about and check in on your neighbours that may not be as fortunate to have whanau close by. A jar of jam, a small tin of homemade biscuits, a cake, speaks volumes in times like these – remember to leave it in their letter box or doorstep with a little note!

If you are stocking up your pantry, remember there are plenty of good quality, healthy foods that you can store and freeze, it’s not all about canned beans, noodles and mince!

So, I thought I would share with you my basic pantry list, that covers a great deal of cuisines, so you have a bunch of ingredients that will cover most recipes. Plus, one of my favourite Regal Salmon recipes to keep your taste buds humming.

Regal King Salmon Bagels

Simplicity is bliss, and there is nothing more simple or satisfying than a toasted bagel spread with cream cheese and toped with layers of Regal Cold Smoked Salmon.

With its vibrant colour and sea-salt aroma, each delicate sliver of Regal Marlborough King Salmon has a velvety texture which delights the palate and melts in your mouth.

A good quality cream cheese will make a huge differenceas well so choose wisely. Zany Zeus Cream Cheese is a favourite.
