Regal Cold Smoked Salmon Bánh mì

200g Regal Cold Smoked Salmon 

1 baguette, roughly 80cm in length

1/4 cup mayonnaise

1 tsp hot sauce

1/2 red onion

2 baby cucumbers

1 peeled carrot

1 green jalapeño chilli

1 spring onion

1 lime, cut into wedges.

sea salt


Cut the baguette into four even pieces, half pieces horizontally. In a small bowl, combine mayonnaise and hot sauce. Smear a generous spoonful into each sandwich. Thinly slice red onion, cucumber and jalapeño. Julienne carrot and spring onion. Fill sandwiches with salad ingredients and smoked salmon. Finish with a squeeze of lime and sea salt.
