1 x 100g Regal Manuka Smoked Salmon Slices
4 tbsp rice vinegar
1 tsp salt
1 tsp sugar
2 tbsp mayonnaise
½ cup spinach leaves, parsley or coriander
Juice of ½ lemon
Creamy goats’ cheese or feta cheese
Toast sourdough bread under a grill or in a toaster.
Mix together rice vinegar with salt and sugar. Slice thinly and place in a bowl with the vinegar mix, toss well and leave to pickle for 10-15 minutes.
In a blender or food processor mix peeled avocado with mayonnaise, spinach leaves, parsley or coriander, lemon juice, and season to taste with salt and freshly ground black pepper.
Spread each slice of toasted bread with creamy goats’ cheese or feta cheese, then arrange some of the pickled radishes, slices of Regal Salmon and garnish with radish microgreens and chopped dill. Sprinkle with plenty of freshly ground black pepper to serve.
