1 x 100g Regal Manuka Smoked Salmon Slices
3.5 cups new baby potatoes
2 Tbsp of butter
2 Tbsp of olive oil
Handful of fresh snow peas
Handful of fresh herbs: dill and/or thyme
1/4 cup of dill pickles diced
1 tsp of Dijon mustard
Juice of one lemon
2 Tbsp of mayonnaise
3 or 4 stalks of celery, diced
Cook new baby potatoes in salted boiling water for 12 minutes. Allow potatoes to cool, then thinly slice.
Heat a frying pan with butter and olive oil on moderate-high heat. Fry the potatoes for 2-3 minutes each side until golden and crunchy. Arrange potatoes on two serving plates. Top with Regal Salmon, sliced fresh snow peas, fresh herb leaves and a squeeze of lemon juice to finish.
To make the herb mayonnaise, mix together diced celery, dill pickles, Dijon mustard, 1 Tbsp of olive oil and finely chopped herbs. Drizzle mayonnaise over salad. Add salt and pepper to taste.
