Salmon en Papillote by Nick Honeyman

1 x pack Regal Marlborough King Salmon Fresh Cuts Loins or 250g Fresh Regal Salmon

1 x Onion

1 x Shallot

1 x Head broccolini

1 x Baby Fennel 

Pinch saffron

1 x Punnet cherry tomatoes

Lemon juice

Olive oil


1. Remove Regal Salmon from refrigerator and allow to come to room temperature

2. Soften onion in olive oil and add shallot, broccolini and baby fennel, add saffron and cherry tomatoes, season with lemon juice and toss

3. Place Regal Salmon on greaseproof paper, season and place vegetables on top. Fold paper in half and finely fold edges, so no air escapes. Place on barbecue or in oven for 7-8 minutes. Open carefully and serve.
